The earth almond

The tiger nut, also called earth almond, is neither a nut nor a grain: it is a small tuber with a sweet flavour, somewhere between almond and coconut. Naturally gluten-free and rich in fibre, it can be eaten as it is, blended into a drink — Spanish horchata — or ground into flour.

Organic tiger nuts: the tuber mistaken for a nut

Discover organic tiger nuts, also known as chufa or earth almond. The names mislead: this is neither a nut nor an almond, but the tuber of a sedge, Cyperus esculentus, cultivated since ancient Egypt. The distinction matters: the tiger nut is not among the tree nuts requiring mandatory declaration, which makes it an option for anyone avoiding them.

Its crunchy texture and mild sweetness, somewhere between almond and hazelnut, make it a snack apart.

What its composition allows us to say

Dried tiger nut is high in fibre: 11.7 g per 100 g, nearly double the threshold that permits the claim. Few everyday foods bring as much. It is also low in salt (0.065 g per 100 g).

A word about portions: this is a dense food, 467 kcal per 100 g, mostly from its fats. A 30 g handful therefore brings 3.5 g of fibre — already more than a slice of wholemeal bread — for 140 kcal. Eat them by the handful, not by the bowl.

Naturally free from gluten

It is a tuber, not a cereal: it contains no gluten. Its flour works in gluten-free baking, where it brings a softness and a natural sweetness that neutral flours do not have.

  • Drinks: horchata de chufa, the Valencian drink, is made by soaking the tubers overnight before blending and straining them.
